Ingredients
- Pumpkin (5 slices)
- Garlic slices (2 cloves)
- Ginger, ground (1 teaspoon)
- Brown Sugar (1 tablespoon)
- Water (1 cup)
- Black Bean Sauce (1 tablespoon)
- Molasses (1 tablespoon)
- Coconut Milk (2 tablespoons)
- Olive Oil (1 tablespoon)
Method
- Place garlic, ginger, water, brown sugar, black bean sauce and molasses into a saucepan and bring to a boil.
- Add in olive oil and pumpkin slices.
- Cover and simmer for 5 minutes.
- Add in coconut milk and cook until pumpkin softens.
