- Cashews (1½ cup)
- Dates (10 pieces)
- Vanilla Extract (1½ teaspoons)
- Corn Starch (3 tablespoons)
- Water (1½ cup)
- Bananas (3 pieces)
- Salt (½ teaspoon)
- Blend all ingredients except bananas until smooth.
- Cook over low heat until mixture thickens.
- Slice bananas and lay half of them on top of pie crust before adding filling on top.
- Place the rest of the banana slices on top of the filling and sprinkle shredded coconut on top.
